Variation on Lillian Hellman's Pot Roast

Introduction

This is taken from Nora Ephron's novel Heartburn. Ephron's heroine and alter-ego, Rachael, does this as a whole pot-roasted piece of beef fillet. I do it as a beef casserole instead.

Ingredients

Serves: 4

  • cubed chuck steak (or beef bolar blade)
  • 1 can mushroom soup (cream of)
  • 1 packet french onion soup mix
  • 1 large finely chopped onion
  • 3 cloves crushed garlic
  • 2 cups red wine
  • 2 cups water
  • bouquet garni
  • 1 crushed bay leaf
  • oil
  • flour (seasoned)

Method

  • Coat cubes of meat in seasoned flour and saute in some oil in a large Dutch oven or heavy casserole until browned. A
