As St David's Day is approaching, I thought I'd submit my late mother's recipe for Welsh Cakes. There are loads of recipes floating around, but this is how my mother made them - as do I - still on her old 'bakestone'!

Ingredients

Serves: Makes about 12-24

Metric Cups
  • 500 grams self-raising flour
  • 1 teaspoon mixed spice (level)
  • 1 pinch of salt
  • 75 grams butter (or margarine)
  • 75 grams lard
  • 100 grams caster sugar
  • 2 eggs
  • 6 tablespoons full fat milk
  • 17⅔ ounces self-rising flour
  • 1 teaspoon pumpkin pie spice (level)
  • 1 pinch of salt
  • 2⅔ ounces butter (or margarine)
  • 2⅔ ounces lard
  • 3½ ounces superfine sugar
  • 2 eggs
  • 6 tablespoons whole milk

Method

Welsh Cakes is a community recipe submitted by TrishM1660 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Sift together flour, salt and mixed spice.
  • Rub in butter and lard until mixture resembles fine breadcrumbs.
  • Stir in sugar and dried fruit. Beat eggs and milk together and stir into dry mixture to make a firm dough.
  • Roll out on a lightly floured surface to about 1cm thick and cut into rounds with a cookie cutter (size is up to you).
  • Heat a lightly greased griddle (or heavy based frying pan) over a high heat for 3 minutes.
  • Lower heat to half, and cook cakes in batches for about 5 minutes each side until golden brown.
  • Dust with caster sugar and cool on a wire rack.

    Serve with tea or coffee. Great as they are, or with butter. If you don't like fruit, you can leave it out, slice them in half when cool, spread with jam and sandwich back together.
