What does this mean?

A delicious sweet and crumbly textured scone delicious served with a dollop of whipped cream and raspberry jam. Yummm.

Ingredients

  • 10 oz stoneground whole wheat flour
  • oz all-purpose flour
  • 1 handful wheat bran
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 4 oz butter
  • 2 oz granulated sugar
  • 8 fl oz buttermilk
  • 1 beaten egg

Method

  1. Preheat oven to 220C/425F.
  2. Mix all dry ingredients into a bowl, then rub in butter with your fingers until the mixture resembles a crumble then stir in the sugar.
  3. Mix butter milk and egg together then add to dry ingredients.
  4. Stir all together. The mixture will be a little moist but don't worry that's how it should be.
  5. Knead very very gently the mixture a couple of times on a floured surface and cut out scone shapes with a 3" cutter.
  6. Cook on the top shelf for 15-17 minutes.
  7.  Leave to cool on a wire rack then serve with cream/butter and jam.
