A delicously thick,warming, and healthy Winter soup. A fantastic way to help with your children's 5-a-day.

Ingredients

Serves: 4

Metric Cups
  • 250 grams red lentils (split)
  • 1 leek (sliced)
  • 1 sweet potato (sliced)
  • 2 large carrots (sliced)
  • 1 stick celery (sliced)
  • 1 clove garlic (finely chopped)
  • 1 bay leaf
  • 1⅕ litres water
  • 1 vegetable stock
  • 3 teaspoons bouillon powder (low salt if possible)
  • ½ teaspoon cayenne pepper (or chilli powder)
  • 8⅚ ounces red lentils (split)
  • 1 leek (sliced)
  • 1 sweet potato (sliced)
  • 2 large carrots (sliced)
  • 1 stick celery (sliced)
  • 1 clove garlic (finely chopped)
  • 1 bay leaf
  • 2⅛ pints water
  • 1 vegetable broth
  • 3 teaspoons bouillon powder (low salt if possible)
  • ½ teaspoon cayenne pepper (or chilli powder)

Method

Winter Warmer Soup is a community recipe submitted by suziewong1 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Place all ingredients into a large saucepan and bring to the boil. Skim the top if necessary. Cover and simmer for 20-25 mins, or until vegetables are tender.
  • Allow soup to cool slightly and remove the bay leaf. Puree the soup.
  • Reheat the soup gently, season with lots of black pepper, then serve.
  • A garnish of chopped herbs is nice, or my husband likes to stir in some chopped bacon pieces that have been grilled until nice and crispy. Enjoy.
