Full question
I would like to make the Christmas-Spiced Chocolate Cake in advance. Can I freeze the cake and then defrost/reheat in advance of serving?
Our answer
Nigella's Christmas-Spiced Chocolate Cake (from NIGELLA CHRISTMAS) is a flourless "sunken" chocolate cake. The cake rises up during baking and then sinks back on cooling to give a rich, slightly gooey texture. The cake itself can be make in advance and frozen without the topping. We would suggest freezing the cooled cake in the springform pan for extra protection. Wrap the pan in a double layer of food wrap and a layer of foil and freeze for up to 1 month.
To thaw the cake, unwrap the pan, cover loosely with fresh food wrap and leave in a cool room overnight. You would not usually reheat this type of cake but you could move it to a warm place 1-2 hours before serving. The topping doesn't freeze well but can be made up to 3 days ahead. Store in an airtight container that has been lined with baking parchment (parchment paper) in a cool, dry place but not in the fridge. Add to the top of the cake just before serving.
