Hello, I want to make Forgotten Cookies but it would be easier for me to make them in the day rather than overnight. How many hours can the cookies stay in the oven? Thank you very much.

Nigella's Forgotten Cookies from AT MY TABLE) are meringue cookies that are put into an oven that has been preheated but is turned off as soon as the cookies are put in the oven. The cookies set in the cooling oven and should be left for several hours, hence it is usually easiest to leave the cookies in the oven overnight rather than tie up the oven during the day.
For overnight we would usually allow at least 8 hours, though the cookies could be left for up to 10 hours. However please note that the cookies, like all meringues, are affected by the weather and may not dry out properly in wet or humid conditions. So if you have damp weather or a humid kitchen you may prefer to defer your cookie making to a dryer day.
