Is there anything I need to know about increasing the Butterscotch Pots recipe to make 6. Doing it in batches of 2 seems like a lot of work!

Our answer

Nigella's Butterscotch Pots (from AT MY TABLE) is a caramel flavoured pudding. The recipe makes 2 but could be doubled or tripled.

If making larger amounts then please note that you will need a large, deep pan. When the cream is added to the caramel in step 3 it bubbles up a lot, so you need to have a pan that is deep enough so that the mixture does not bubble up over the top of the pan. Hot sugar burns easily so make sure that you keep your hands protected when adding cream to larger amounts, in case of splashes. Also when making larger quantities it can take some time for the custard mixture to heat up evenly and thicken. We suggest using a lower heat and a allowing a longer cooking time, so that the custard on the bottom of the pan doesn't burn. And stir constantly, making sure you get into the edges of the pan.
