I can't get golden syrup in Israel, can I use date honey instead in the Steamed Syrup Sponge?

Our answer

Nigella's Steamed Syrup Sponge (from HOW TO BE A DOMESTIC GODDESS is a sponge pudding cake that is steamed and drenched with golden syrup. Golden syrup is refined, so it is sweet but fairly flavourless. Our concern with using date honey or date syrup is that it is fairly dark and has a stronger flavour, which may detract slightly from the light flavour of the sponge.

We would suggest trying to find a light corn syrup, which we understand can be found in some stores (Karo is probably the best-known brand but others are available). Otherwise a light honey could be an alternative. If you are particularly fond of date honey then you can use it, but we suggest trying to find one that is light and not too thick and molasses-like.
