I need to make a two tier chocolate cake for vegans. Is it possible to double the quantity of the Dark And Sumptuous Chocolate Cake recipe?

Our answer

Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is baked in a springform pan as the cake is fairly deep and we would not particularly recommed baking a double quantity as a two-layer version of this cake will be quite large and you may find it difficult to stack the cake layers.

Instead we suggest making the recipe as stated and splitting the cake batter between two 20cm (8-inch) sandwich tins (cake pans). Bake for about 20-25 minutes, until the cake feels firm on top, the sides are slightly pulling away from the tin and a cake tester should come out clean. The cake can be quite tender so make sure that you grease the tins well (you could use vegetable oil for this) and line the bottoms of the tins with baking parchment (parchment paper). Cool the cake layers in the tins for 10 minutes then carefully turn out onto a wire rack and cool completely. When you are lifting the cake layers make sure that you try to support the bottoms as much as possible and if the cakes crack you can cement them back together with some of the icing. You will probably need to make 1 1/2 times the icing quantity to fill and coat the cake, or make a vegan buttercream for filling.
