Nigella's Spinach With Pinenuts And Sultanas (from FEAST is a wonderful side dish that will elevate any plainly grilled meat or fish, or could be served as part of a vegetarian or vegan mezze feast.

There is a splash of white wine in the dish to give some liquid for the spinach to wilt into and also to add a little extra flavour and a bit of acidity. If you don't have white wine open then rosé would be a possible alternative or if you have a bottle of dry white vermouth open then that would also be a good alternative. If none of these are an option, or if you would like to avoid alcohol, then you can use 2 tablespoons of water instead and at the end taste the spinach and maybe add a drop or two of lemon juice of you think it is needed to lift the flavours slightly.
