Hi, i love making Nigella's Breakfast Bars (Nigella Express, p94), even making my own variations. What the recipe doesn't say is how long they keep. Or can they be frozen? Thanks for this opportunity to ask the question!

The Breakfast Bars do keep well as long as they are stored properly - they shopuld keep for 10 to 14 days in an airtight container but make sure that it is in a cool place and away from direct light. It is also possible to freeze the bars for up to 3 months - put the bars in a resealable box with a piece of baking parchment (parchment paper) in between each layer of bars before freezing. Alternatively you could wrap each bar in a double layer of clingfilm (plastic wrap) and put them in a resealable bag before freezing, this would make it easier to pull them out as you need them.
Thaw the bars at room temperature for 2 to 3 hours. We would suggest that the thawed bars are stored in an airtight box and eaten within a couple of days of thawing, as they may soften more easily once they have been frozen.
