Wacky Chocolate Cake

Introduction

My nursery chocolate cake - no other recipe has ever come close

Ingredients

Serves: 1-10

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
  • 5 tablespoons vegetable oil
  • 1 cup lukewarm water
  • 1½ cups flour
  • 3 tablespoons unsweetened cocoa
  • 1 cup superfine sugar

Method

Wacky Chocolate Cake is a community recipe submitted by galanthus and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Pre-heat oven to 180 degrees centigrade/gas mark 4. Grease and line a 4"x6"x1.5" rectangular tin (e.g. a small roasting tin).
  • Sieve together the dry ingredients. Make 2 small holes and 1 larger hole in the floury mixture, and into each of them measure the vanilla, vinegar and oil.
  • Pour the water over the top of it all, and mix well together.
  • Pour into lined tin (it will be quite runny) and place in oven.
  • Cook for 30-40 minutes, or until a skewer poked into the middle comes out clean.
  • Allow to cool slightly in tin, and then turn onto rack to cool completely.
  • Additional Information

    I've used all sorts of tins and cooking times, and different "cup sized" measures - this cake is remarkably resilient to failure. The absence of egg and butter makes it (I suppose) vegan.
