A RICH CHOCOLATE CAKE

This is a rich cake which can be eaten with a cuppa or as a dessert with some creme fraiche and/or raspberries. It's my mum's recipe, hence the ozs!

Ingredients

  • Gluten Free
  • Vegetarian
  • 6oz /175g dark chocolate
  • 4oz/110g butter - softened
  • 4oz/110g caster sugar
  • 7 oz/110g grounds almonds
  • 4 eggs separated topping
  • 2 tbsp apricot jam
  • 3oz/50g dark chocolate
  • 2oz/30g butter

Method

  1. Preheat the oven to gas 4/350F/180C.
  2. Grease and line an 8 " [20cm] spring form cake tin.
  3. Melt the chocolate, and cream the butter and sugar together till light and fluffy.
  4. Stir in the ground almonds, egg yolks and the melted chocolate.
  5. Whisk the egg whites till stiff and fold them into the mixture carefully.
  6. Pour into the tin and bake for 45-50 mins till the cake is firm to touch.
  7. As this is a rich cake, the top might sink and crack a bit - this is OK!.
  8. Leave the cake in the tin for a few minutes then put it onto a wire rack.
  9. When cake is cool, spread it with the apricot jam.
  10. Melt the chocolate and the butter together and spread over the top of the cake.
