Great diced with a drink or sliced for a picnic or a lazy summer lunch. Tastes better on the same day, though. You can also keep the basic cake mix and change the other ingredients.

Ingredients
Switch to Cup MeasuresFor the base cake mix
- 250 grams plain flour
- baking powder (half a sachet - approximately a teaspoon and a half)
- 4 eggs
- 100 ml milk (or cream or white wine - any liquid really)
- 100 ml oil (olive or half olive oil, half vegetable oil)
For the fancy ingredients
- 2 balls mozzarella (diced)
- 8 sundried tomatoes (in oil - patted in a piece of kitchen roll)
- 1 teaspoon Herbs de Provence (or 200g pitted green olives)
- 150 grams bacon lardons (fried)
- 150 grams Cheddar cheese (grated - or 200g diced feta cheese)
- 2 teaspoons dried basil
Method
- Preheat the oven at 200°C.
- Mix the batter as you would a muffin one : Pour the wet ingredients into the dry ones.
- Then add your "fancy" ingredients and mix thoroughly.
- Pour into a lined loaf tin and bake for about 45 mins and golden brown.
- Let it cool before you slice it.
