Baking Lemon Pavlova

I saw Nigella make the Lemon Pavlova on Masterchef Australia and I want to try this. Can I make it in turbo broiler/convection cooker instead of oven? Thank you so much!

Our answer

Nigella's Lemon Pavlova (from SIMPLY NIGELLA) is a traditional pavlova meringue that is flavoured with lemon zest. The baking time for pavlovas is generally shorter than for a traditional meringue, and at a higher temperature, so that the crust is crisp but the centre is soft and marshmallowy.

It may be possible to bake the meringue in a convection cooker but if it is a countertop type then you will need to check if the oven has the capacity to fit a baking sheet that is the correct size, bearing in mind that the meringue disc will expand slightly as it bakes. Also the temperatures given in the recipe are for conventional ovens and not convection ones. We would advise that you check the handbook or user guide for your particular model for advice on baking meringues and also for guidelines on adjusting oven temperatures.
