Our answer

Nigella's Caramel Croissant Pudding (from NIGELLA EXPRESS is a good way to use up leftover croissants that have become a little stale. They are baked in a bath of caramel custard, to make a deluxe version of bread and butter pudding.

The custard contains a little bourbon as the buttery flavour of bourbon brings out the flavour of the caramel. You could also use rum as an alternative and the alcohol should cook out as the pudding is baked. However, if you prefer not to use alcohol then you can certainly omit it but you may like to add a teaspoonful of vanilla extract instead of the bourbon, just to help add an extra layer of flavour to the dish.
