Can you make the White Bean Mash ahead of time? Does it keep well?
Nigella's White Bean Mash (from NIGELLA EXPRESS) is a quick side dish that flavours tinned white beans (such as canellini beans) with garlic and rosemary. As it is so quick to make, you don't save much time in making it in advance. However, you could infuse the oil and mash the beans an hour ahead and then reheat the beans in the saucepan or in a microwave just before serving.
Leftovers can be stored, covered, in the fridge for up to 3 days or frozen for up to 3 months in an airtight container. If frozen, thaw the beans overnight in the fridge before using. You could eat the beans cold, as a type of hummus, or reheat the beans in a saucepan (adding a splash of water, if needed) or in a microwave until piping hot. Reheat the beans only once.
