The White Tiramisu looks lovely and I adore Nigella's style of cooking. Can I make meringues to use rather than using store-bought ones? I have frozen leftover egg whites.
Our answer
Nigella's White Tiramisu (from HOW TO EAT) dips the savoiardi biscuits in a combination of rum and milk, so that they are white rather than coffee-tinted. The tiramisu also has a layer of crushed meringue incorporated, with a layer of crushed meringues added on top just before serving.
Nigella uses store-bought meringues for convenience and ease, but you could make your own meringues. You would need to make French-style meringues using 3 egg whites and 150g (¾ cup) of caster (superfine) sugar, so you could use two frozen and thawed egg whites plus the excess egg white from the recipe or three frozen and thawed egg whites. You will have a little finished meringue left over after making the tiramisu but the meringues will keep for up to 5 days in an airtight container in a dry place. We would mention that the meringues need to be baked in a low oven until crisp and properly dried out, as they need to be crumbled. Unfortunately, a pavlova-type meringe is not good here as the centre is too marsmallowy and soft to crush into small pieces.
