Chocolate Fudge Cupcakes

Hi there, I was just wondering if I wanted to make the Chocolate Fudge Cake as cupcakes how many would the recipe make? I need to make 40! Looking forward to hearing back from you!

Our answer

Nigella's Chocolate Fudge Cake is a two layer 20cm/8-inch sponge cake and usually these do convert relatively well to cupcakes. However we would mention that we have not tried this ourselves so cannot guarantee the results. This size of cake should yield around 24 cupcakes and you would aim to fill the cupcake cases (paper liners) around 1/2 to 2/3 full with batter. Bake the cupcakes in an oven preheated to 180c/350F. They should take 25-30 minutes, but have a very quick check at 20 minutes as ovens do vary. The cucpakes should feel firm on top and a cake tester inserted into the centre of the cupcakes (choose one in the centre section of the pan to test) should come out clean.

The frosting should be enough for the 24 cucpakes, unless you are planning on making large swirls on top of the cupcakes. If you want large swirls then you may find that you need 1 1/2 times the quantity of frosting in the recipe.
