Freezing Cakes for Christmas

Hi, can you freeze Nigella's Clementine Cake (How To Eat, p75)? If so how long should you leave it to defrost? Thanks!

Does the Chocolate Guinness Cake (Feast, p286) freeze well if I leave off the topping? I regularly make this fantastic cake, and this Christmas I have promised to make it for 3 different people. If so, how long do you think it would take to defrost? I know it will taste far better fresh, but I'm not going to be in my own home over Christmas and don't trust the oven I would be using! Many thanks in advance for your help.

Our answer

Both the Guiness Chocolate Cake and the Clementine Cake can be made up to 3 months in advance and frozen (without any icing for the Chocolate Guinness Cake). Cakes generally freeze quite well but need to be wrapped properly to make sure that they are well protected in the freezer.

We suggest that the cakes are wrapped tightly in a double layer of clingfilm followed by a double layer of foil. make sure that there are no exposed areas of cake after wrapping. Label the cake and freeze it.

When you want to defrost the cake unwrap it and put it on a wire rack. Leave it at room temperature for 4 to 6 hours, or overnight. You can then ice the cake, if necessary, and store in a cake tin or other suitable container.
