What is the 'kitchen roll' used to squeeze juice from ginger root in Indian-Spiced Shepherd's Pie? Is it the same as 'paper towel' used in USA? Or could cheesecloth be used? Thanks.

Nigella's recipe for Indian-Spiced Sheperd's Pie (from SIMPLY NIGELLA) has a topping made from mashed sweet potatoes that are flavoured with ginger. Rather than adding grated ginger to the mashed potatoes, which can be slightly fibrous, Nigella extracts the juice from fresh grated ginger by making a small bag and squeezing out the juice.

The bag is made from kitchen roll, which is the UK term for paper towels and can also be known as kitchen paper. It is strong enough to twist together to put pressure on the grated ginger and lets the extracted juice drip out. You could certainly use a square of cheesecloth or muslin as an alternative, or the corner of a clean linen or cotton (not terry) tea towel or dish towel.
