Meatzza Without Tomatoes

Asked by ZoeShaw. Answered on 31st July 2017

Full question

Is it possible to substitute the tinned tomatoes in the meatzza recipe? I have a tomato allergy but would still like to make this. Thank you!

Our answer

Nigella's recipe for Meatzza is a culinary pun on a pizza, swapping the dough crust for one made from minced (ground) beef. The tomato sauce does help slightly to keep the meat moist during cooking so if you wished to make a "meatzza bianca" using just cheese, we would add 1-2 tablespoons of milk to the meatzza base (just enough to add a little extra moisture to the mixture but not make it wet) and drizzle the garlic oil and oregano over the top of the meat base bedore adding the cheese.

It may also be worth considering roasted red peppers as an alterntive to the tomatoes. Drain off any excess liquid or oil from the peppers and chop them coarsely before mixing them with the garlic oil and oregano. We would suggest using 200-250g (6-8 ounces) drained weight of roasted red peppers.
