I have just finished making the recipe for the non-conformist christmas pudding from Feast. I decided to make 2 smaller puddings from the recipe, one for this christmas and one for next year. i have stored the one for this year in baking parchment and foil and keeping it in the fridge. I was wondering which is the best way to keep the one for next year? Can I freeze it? Not sure I can store it in the cubboard for that long as it only has a relatively small amount of alchohol in it. Any advice would be great. Thanks Sarah

The Nonconformist Christmas Pudding is fairly similar in makeup to a regular Christmas pudding so it is fine to make it 3-4 weeks in advance. It does not necessarily need to be refrigerated but does need to be kept in a cool, dry place. We would suggest covering the surface of the pudding with a circle of baking parchment (parchment paper) then tightly wrapping it 2 layers of clingfilm (plastic wrap) and then 2 layers of foil. Then all you need to do on Christmas day is pop it into the steamer for its second cooking.
If you are keeping the pudding any longer than 4 weeks then it is best to freeze the pudding. It should keep for one year in the deep freeze. Wrap the pudding as described above before freezing. Thaw overnight at cool room temperature and steam as per the recipe instructions.
