Pineapple In Tropical Chocolate Cake

Can I use another sort of canned fruit in the Tropical Chocolate Cake? I am allergic to pineapple.

Our answer

Nigella's Tropical Chocolate Cake (from FEAST) gets its name from the addition of pineapple and coconut. The pineapple adds moisture to the chocolate cake and the marshmallow-like frosting is flavoured with coconut.

Unfortunately we are unable to suggest an alternative to the pineapple in the cake as other canned fruits would behave differently in the cake batter. However you could try making the sponges from Nigella's Old Fashioned Chocolate Cake and replacing the vanilla extract with 2 tablespoons of the coconut-flavoured rum. You could then frost the cake with the coconut frosting from the Tropical Fruit Cake. Please note that the frosting is similar to a 7-minute frosting and so the cake should be eaten as soon as possible after the frosting has been added. Leftovers should be loosely covered and refrigerated and eaten within 24 hours as the frosting starts to lose its dreamy lightness. Also as the egg whites in the frosting are not fully cooked it may not be suitable for those with a compromised immune system.
