I have made Nigella's Pomegranate Ice Cream regularly, but in Australia we can only find this fruit for about 6 weeks over the Christmas period. Is there any other fruit that can be substituted and in what quantities? Many thanks, Jean
Nigella's No Churn Pomengranate Ice Cream (from Nigella Express and on the Nigella website) is very easy and very popular. Pomegranates are quite seasonal but if you can find pure pomegranate juice (such as Pom Wonderful) in the chilled section of your supermarket then this would be a good alternative and is usually available all year round. You will need to use 125ml/1/2 cup juice for each pomegranate, so for Nigella's recipe you need 375ml/1 1/2 cups in total. However do check that it is pure pomegranate juice and not a pomegranate juice drink (which will contain quite a lot of sugar).
Nigella has many other no churn ice cream recipes which you may like to try. The closest to the pomegranate recipe is probably the No Churn Bitter Orange Ice Cream from Nigella Bites (and on the Nigella website). There is also the Margarita Ice Cream from Nigella Express (and on the Nigella website), the Pina Colada Ice Cream from Kitchen and the No Churn Coffee Ice Cream from Nigellissima (and on the Nigella website).
