Quadruple Chocolate Cake As A Bundt

Would the Quadruple Chocolate Loaf recipe work in a bundt pan? I have a beautiful fancy cake pan I like to use. I have made pound cakes in it that took about an hour to bake. Is this a bad idea?

Our answer

Nigella's Quadruple Chocolate Loaf Cake (from FEAST here and on Nigella.com here) is a rich chocolate cake that is baked in a loaf pan. Nigella's pan measures approximately 21 x 11 x 7.5cm (9 1/2 x 4 1/2 x 3 inches) and these pans have a capacity of around 1.9 litres (8 cups). It should be possible to bake the cake in a bundt pan but you would need to find one of a similar volume, which should be a pan with a diameter of approximatey 23cm (9 inches). If you use a larger pan (and many have a volume of 2.5 litres (10 cups) or more) then the cake could end up being slightly skinny.

You need to make sure that you grease the crevices of the pan thoroughly with vegetable oil, or use a suitable non-stick baking spray. The baking time for the loaf cake is around 1 hour but, as a bundt pan has a hole in the centre, it may bake more quickly, so we suggest starting to check after 45 minutes. Adding the syrup is more tricky, as the cake will be turned out upside down. So you may want to pour over half if the syrup while the cake is in its pan then, when the cake has cooled enough to remove it from the pan, you could brush the remaining syrup over the (now) top of the cake, before adding the shards of chocolate. We would also mention that we have not tested this cake in a bundt pan, so we are unable to guarantee the results.
