Sea Salt to Table Salt

Hi, I would like to use sea salt in my cooking, but must admit I usually have table salt in the house. My question is when a recipe asks for sea salt, how much would I use of table salt? Thank you, Nads.

Our answer

Sea salt is popular in cooking as it is percieved as being quite pure. Nigella, and many other cooks and chefs, likes to use sea salt flakes as they dissolve quickly and they provide a crunchy texture if used just before serving a dish. The sea salt quanitities listed in Nigella's books are for sea salt flakes.

If you prefer to use table salt (or finely ground sea salt) then use half the quantity stated in the recipe. If you are using kosher salt then use the same quantity as stated for sea salt flakes. We would emphasize that Nigella's salt quantities are very much guidelines only and you should adjust the quantities very much according to your personal taste.
