Our answer

Nigella's Chocolate Mint Cookies from NIGELLA EXPRESS are chocolate flavoured cookies with chocolate chips and a mint chocolate glaze. The cookies will keep for up to 5 days in an airtight container, though they may soften slightly over time due to the glaze. The cookies should also be put in a single layer in the container, or containers, to stop the glaze from being smudged.

The baked cookies can also be frozen, though it is better if possible to freeze them without the glaze as the glaze can become sticky when defrosted. The unglazed cookies can be frozen in resealable plastic bags for up to 3 months. Defrost on a wire rack at room temperature for about 1 hour and then glaze. If freezing glazed cookies then put them in a single layer in an airtight container or containers.
