Worcestershire Sauce

Asked by Bar Shati. Answered on 17th June 2014

Full question

Hi, Nigella uses Worcestersire sauce in some of her recipes. I'm from Israel and we dont have here any Worcestershire sauce and also I don't like anchovies. Is there are replacement for this sauce? Thanks!

Our answer

Worcestershire sauce adds a piquant flavour to many dishes and the main ingredients are vinegar, molasses, anchovies and tamarind. This gives a sweet, tangy and savoury mixture. The sauce doesn't taste "fishy" so even if you don't like anchovies you may find that you can use Worcestershire sauce in various dishes and you may be able to find it on the internet.

Otrherwise many people like to use a mixture of soy sauce, vinegar and dark brown sugar. We would suggest trying mixing 1 teaspoon of each of these together and then adjusting the ingredients according to your own taste. If you like and have Thai fish sauce (nam pla) then you can add a couple of drops of this too.
