This was a perfect Friday night grilling recipe for celebrating the end of a tough week. My vegetarian girlfriend came to visit and get away from the city and we grilled these up with a big bottle of Sauvignon Blanc at hand, fresh mint from our garden and experimented with other seasonings. We tried a little red wine vinegar but the real winner was a Tuscan seasoning mix sprinkled on the eggplant as they went on the grill. This was easy and relaxing and I'll definitely be cooking this again!
