I have been a Nigella follower for almost twenty years and purchased her book How to be a Domestic Goddess as a teenager and loved watching her show, “Nigella Bites”. I own all of her cookbooks and often give them as gifts to friends and family. As the daughter of an Englishman, I grew up helping my Nanny (grandmother) make rock cakes, crumpets, and lemon curd. So, when I saw this recipe I had to try it! I’ve made other pavlovas before but this gave me the opportunity to use my Nanny’s lemon curd recipe and honor her as one of my greatest inspirations, both in and out of the kitchen. Actually, I made so much lemon curd I gave a jar to a friend and fellow Brit! The only change I made was I omitted the lemon peel from her recipe because I like my lemon curd a bit sweet and less tangy. I followed Nigella’s recipe, however, to the letter and the result (as promised) is both delicious and beautiful. Silky, pillowy, and crunchy all at the same time.
