Nobody believes me when I tell them how easy this cake is - you don't even peel the pears! Genius! This cake easily impresses everyone and is probably one of the best gluten-free cakes I've ever made - properly cakey rather than dense, claggy, and drowned in some sickly citrus syrup. Absolutely a new favourite.
