Making this for the second Easter in a row now, so that’s long enough to call it a tradition, isn’t it? Made it last year for a huge family gathering but this year myself and my husband will somehow have to polish it off ourselves! All week Mini Eggs were sold out in the shops and I was despairing. Any time any of my colleagues said “anyone want anything from the shop?” I always cried “Mini Eggs!” resulting in them returning with all sorts of eggs that they hoped would fit the bill, from Smarties to Terry’s chocolate orange to Dairy Milk eggs - none were quite right for the cake, but it meant we got through the work week with plenty of bonus snacks! Eventually I settled for M&M eggs as they were at least the right pastel-y colour. Hoping that the right eggs - and the right company - will be back next year!
