One of the easiest cheesecakes I have made and I will experiment with other flavours such as lemon and vanilla. I always use a potato masher to ensure a firm and even base. I have decorated the cheesecake with ingredients that will freeze or can be removed before freezing so we can share it with our friends after lockdown has ended here in Italy. I will pour maple syrup over the slices when serving and when that is not available a toffee sauce. I am dedicating this to my brother-in- law and his family for thanksgiving as they live in the US.
