These cookies bring lots of memories to me. My granpa and nannie used to eat everything but cookies filled with jam were their favourite. I wasn't able to make some for them while they were still with us but I gave my best for them today. My nannie made the most delicious raspberry jam using fresh raspberries from our garden so this time, I decided to make my own vanilla raspberry jam! I also used margerine instead (my crazy fiancé hates butter) so it was quite tricky since the dough was spreading all over! Had to stop and slide the though in the freezer to toughen it up! :) I also switched hazelnuts for almonds, it was hard for me to find some here in Japan. Topped with some freezed dried raspberry powder and a few pearls, they smell like summer on this cold winter night! I hope I did okay for a first try, holding myself until the morning when I can finally taste them and gift them to coworkers and friends! Thank you so much Nigella for this wonderful recipe!!!
