This cake is amazing! I make it at least once a month. The subtle taste of lemon, the smooth coconut inside and on top is so perfectly balanced with the sweetness and sourness of the berries. This cake fits every season but every bite takes me back to summer. Every July I set a date with my mother in law to go handpick fresh blueberries in a farm. Last year I harvested eight kilograms. At home I freeze them so I can enjoy their lovely taste for about a half a year. I used the last berries for the compote in this cake. I cherish this photo and every time I watch it I can feel love, joy and happiness Also the flowers on the foreground reinforce these feelings.
