I love using a Bundt tin for baking cakes because I just love the way icing will drip down any way it pleases. For this recipe, I thought the yogurt topping and blueberry compote beautifully draped the sides of the cake. The vibrant blueberry compote looks beautiful against the white yogurt topping. This is my first vegan cake recipe! I used GF flour and despite the bicarb and baking soda, my cake appears a little flatter compared to others. Nonetheless, it is full of flavour.
