OMG, so much better for using all those overripe bananas for muffins or banana bread - and everything gets blitzed in the food-processor! I did take the toffee a little too far, but love it's deep rich toffee flavour. Was a huge hit with everyone. And a little tip from a rookie like me...I couldn't find oven-proof cling wrap, so I improvised with an extra large oven bag. I folded the opening down under the baking tin, but I could have also trimmed it. I probably didn't even need the alfoil. It did the job of keeping the water out, and as an added bonus, I can re-use it next time so good for the environment! Is this the first environmentally friendly Bannoffee Cheesecake?!
