
For my birthday cake this year (it is today!), I baked Nigella's Lemon Pavlova with Homemade Lemon Curd. It is winter here in Australia, and lemons are at their absolute peak - so I had to substitute lemons in place of passionfruit in Nigella's passionfruit curd recipe. I must say - this cake is a new family favourite and will be spoken about for years to come. As instructed by her Majesty, I topped this with lots and lots of almonds, and it indeed added the perfect amount of crunch and nutty butteriness that went so well with the citrus flavour. I am a long time fan of Nigella, and look up to her as a role model in the kitchen. I really feel honoured to be submitting a recipe of hers - and I look forward to trying out the rest.
