Nigella's White Chocolate Cheescake was my choice for a hot Summer's day. Creamy Belgian White Chocolate cheesecake filling on top of a crushed stem ginger biscuit base. Added crystallised and ground ginger for extra zing with pistachios and pomegranate seeds to bring a colourful summer vibe.
