We’re going through a busy spell at both home and work and savouring comfort from classics like Nigella’s ‘Egg’s in Purgatory’. I love adding splashes of tangy Tabasco sauce over the dish and fresh Coriander if I have it to hand. Delicious with nostalgic sourdough soldiers and perfection as a solo supper!
