Given that I am, generally, given to anxious sunphobia, I can't tell you how gorgeous it is to relish the good weather for once. Spring has sprung and the rich sunniness and radiant skies are making me feel sun-dazzled, but in a good way.
It's not going to my head so much as to my kitchen, and I can't stop with my lemon polenta cakes. If anyone needs to cook, as I have recently, for someone who can't eat dairy, let me tell you that if you replace the butter with 150ml olive oil (not extra virgin) it will work splendidly too. Today, I am going to serve mine with a salad of raspberries, blueberries, blackberries and pomegranate seeds dressed with a dash each of rosewater and orange flower water. And before that, there will be a casserole fragrantly full of - what else - my Coq Au Riesling and some super-seasonal Jersey Royals. Yumbariba!
