Quick and Easy Light Fish

Introduction

This is perfect for a light and very quick meal, and can be altered easily to suit your likes. Best eaten with rice or cous cous.

Ingredients

Serves: 4

  • 4 small fish fillets
  • 4 handfuls fresh spinach (leaves)
  • salt
  • pepper
  • 2 teaspoons baby capers
  • 1 punnet cherry tomatoes (a small punnet)

Method

Quick and Easy Light Fish is a community recipe submitted by bridge and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

You will need 4 squares of foil, 20cm.

  • Preheat oven at 200ºC (fan forced).
  • Place squares of foil flat on the bench, and put 1 handful of spinach on each foil square in the centre. Place fish on top of the spinach, and lightly sprinkle with salt and pepper (other herbs can be added at this point if you wish).
  • Cut baby tomatoes in half and spread evenly over the 4 pieces of fish, then sprinkle half a tsp of capers over the top of each piece.
  • Now fold the foil in over the fish, pulling 2 sides to meat in the centre. Then fold twice to make a seal. Then scrunch the ends in, and up slightly.
  • Put in oven for 5 minuets, then turn oven down to 180ºC (fan forced) and cook for a further 10 minuets.
