Bacon Brown Potato

Introduction

A bit of a play on words, here. This is a potato, baked in a microwave oven, cut in half length wise, then browned in a frying pan with some reserved bacon drippings. If there are Vegans or those trying to keep Kosher, you could as easily use olive or plain vegetable oil, in which case you could call this "Bake and Brown Potato". Me, I like the bacon flavor. I also like that it is quick, cheap, and very tasty.

  • 1 potato
  • 1 reserved bacon drippings
  • 1 salt
  • 1 black pepper
  • 1 ground cumin
  • 1 potato

Method

  • Bake the potato according to your microwave oven's instructions. When done, remove potato.
  • Set a small frying pan over medium heat. Add one tablespoon of bacon drippings to pan. Cut baked potato in half, clean through, length wise.
  • Set cut side down into hot bacon drippings. Check occasionally using tongs, and allow to brown until potato halves are coloured to your liking.
  • Remove to plate. While still hot, season browned sides with salt, pepper, and a light dust of cumin.
