Ingredients

Serves: a loaf

Metric Cups
  • gluten-free bread (sweet)
  • 1 orange (zest and juice of)
  • 80 grams dates (stoned, chopped)
  • 300 grams gluten-free flour
  • 80 grams ground almonds
  • 1 teaspoon salt
  • 25 grams caster sugar
  • 2 teaspoons yeast (easy-blend)
  • 150 millilitres milk
  • 175 millilitres water (recently boiled)

  • 2⅚ ounces dates (stoned, chopped)
  • 10⅗ ounces gluten-free flour
  • 2⅚ ounces almond meal
  • 1 teaspoon salt
  • ⅞ ounce superfine sugar
  • 2 teaspoons yeast (easy-blend)
  • 5 fluid ounces milk
  • 6 fluid ounces water (recently boiled)

Method

  • Heat the orange juice in small saucepan.
  • Add the zest and chopped dates. Leave to stand, off the heat, for 15 minutes.
  • Mix water and milk and blitz with orange and date mix. Mix together flour, almonds, salt, sugar and yeast in a mixing bowl.
  • Beat in date/juice/milk/water mixture to form a batter. Pour into a 900 g / 2 lb greased loaf tin.
  • Leave to rise, uncovered for 30 mins.
  • Preheat oven to Gas Mark 7 / Electric 220oC / Fan 200oC Bake for around 30 minutes until a skewer comes out clean from the centre.
