This recipe makes a great birthday cake. It holds up to being shaped, it's very moist, large (most important) and a breeze to whiz up. I have lost count of how many times I have made it, but it's always a success.

Serves: 12+

  • 2 cups sugar
  • 3 eggs
  • 1 cup milk
  • 1 squeeze lemon (add to milk to create Sour Milk)
  • ½ cup unsweetened cocoa
  • 7 ounces soft butter
  • 2 teaspoons baking soda
  • ½ teaspoon vanilla essence
  • ¼ teaspoon salt
  • 3 cups self-rising flour
  • 1 cup strong, boiling coffee

    • This is the most reliable big cake recipe I've ever used. I have 7 kids, so believe me when I say I have made more chocolate birthday cakes than the average parent, and this recipe is our favorite.
