This recipe makes a great birthday cake. It holds up to being shaped, it's very moist, large (most important) and a breeze to whiz up. I have lost count of how many times I have made it, but it's always a success.

Serves: 12+

  • 500 sugar
  • 3 eggs
  • 250 milk
  • 1 squeeze lemon (add to milk to create Sour Milk)
  • 125 unsweetened cocoa
  • 200 soft butter
  • 2 teaspoons baking soda
  • ½ teaspoon vanilla essence
  • ¼ teaspoon salt
  • 750 self-raising flour
  • 250 strong, boiling coffee

    • This has become my 'go to' birthday cake recipe. Foolproof and delicious. Even great when I forgot the baking soda once!
