My Mum's Date and Walnut Loaf

Introduction

A cake rather than loaf. A very good keeper

Ingredients

Serves: 6

  • 8 ounces self-rising flour
  • 2 ounces margarine (or butter)
  • 2 ounces superfine sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1 packet chopped dates
  • 2 ounces walnuts

Method

  • Put dates sugar and margarine/butter into a bowl and add 1/4 pint of boiling water. Leave to cool
  • Sieve flour and baking soda together and add to ingredients with egg and walnuts
  • Bake in greased and lined loaf tin at 180.C Gas 4 350F for 45 mins
