Introduction

This is probably the most serviceable, all-round cocktail-party drink: eminently refreshing; satisfyingly quaffable. It started off as a Christmas cocktail, a juicily seasonal Buck’s Fizz (a drink I normally find too acidically challenging at best and downright depressing at worst), but I now make it all the year round, whenever I have something to celebrate. This prettily pink – rather than authentically red – Poinsettia can be knocked back without a moment’s thought. Whether this is entirely a good thing is another matter.. .

Ingredients

Makes: 8-9 glasses

Metric Cups
  • 1 bottle prosecco (or other fizzy dry wine, chilled)
  • 125 millilitres cointreau (or Grand Marnier or Triple sec, chilled)
  • 500 millilitres cranberry juice (chilled)
  • 1 bottle prosecco (or other fizzy dry wine, chilled)
  • ½ cup cointreau (or Grand Marnier or Triple sec, chilled)
  • 2 cups cranberry juice (chilled)

Method

  1. Mix the Prosecco or other fizzy wine with the Cointreau (or Grand Marnier or Triple sec) and cranberry juice in a large pitcher.
  2. Pour into wine glasses or champagne flutes.

Additional Information

MAKE AHEAD TIP: Mix together the Cointreau and cranberry juice in a large pitcher, cover with clingfilm and keep chilled for up to 24 hours. Just before serving, top up with the chilled fizz.
