Hi, the Gorgeously Golden Fruit Cake looks delicious. I'm just wondering if you can substitute brandy for the rum?
Nigella's Gorgeously Golden Fruit Cake (from NIGELLA CHRISTMAS) is a moist, gluten-free fruit cake. It is ready to eat immediately so is also perfect to be made as a last-minute Christmas cake. The fruits are soaked in white rum as this provides a slight kick without having an overpowering flavour. However, if you prefer to use brandy then that is possible though the cake may have a slightly deeper, spicy, oaky flavour. Golden rum would be another possible alternative to white rum.
If you prefer to omit the alcohol completely then you can use freshly squeezed clementine or orange juice as an alternative. If you do use this as an alternative then we suggest that the cake is eaten within a week of making.
