Almonds In Gluten Free Banana Bread

Can I double the rice flour and eliminate the almond flour for the Gluten-Free Banana Bread? We have nut allergies and cannot use nut flours. The recipe looks so delicious.

Our answer

Nigella's Gluten-Free Banana Bread is made with a combination of rice flour and ground almonds (almond meal). This combination gives the bread good moisture and a tender but not too crumbly texture. Unfortunately if you replace the almonds with extra rice flour you will lose the moisture from the oil in the almonds and the bread is likely to become too dry.

However, if you are able to eat sesame seeds (they are not related to nuts, but sesame is a known allergen) then you may like to try Nigella's Chocolate Tahini Banana Bread. This is made with rice flour only and the tahini (sesame paste) provides moisture but also gives the cake a delicious smoky flavour.
